Armadillo Cheesy Garlic Bread
Cheesy garlic bread is, of course, a widely beloved side dish. But you haven't tried real cheesy garlic bread until you've tried it armadillo-style.
- 1 1/4 cup butter room temperature
- 3 cups mozzarella cheese shredded
- 1/2 cup mayonnaise
- 1 1/2 cup parmesan cheese finely grated
- 4 cloves garlic minced
- 1 large round loaf French bread
- 1 tsp red pepper flakes
- 1 tsp kosher salt
- 1 tsp black pepper
Using a bread knife, slice a criss-cross pattern into the bread loaf, 2 inches apart. You only want a partial cut here; don't cut to the bottom.
Turn the oven up to 400 degrees. Put the crossed loaf on a baking sheet lined with foil.
In a big bowl, combine all of the remaining ingredients. Stir that stuff until it's combined.
Stuff the cheesy filling between all of the openings in the bread. After that, cover the top of the bread with any filling you have left over.
Get out another piece of foil and spray it with cooking spray. Lay that foil on the bread, sprayed side down, and crimp the two foil pieces together together. Bake that bundle for 20 minutes.
Turn the oven down to 375 and take off the top piece of foil. Keep baking the bread for another 15-20 minutes. You're ready to go when the top starts turning golden brown and the cheese has completely melted. Let the bread cool for a few minutes, and enjoy.
