Salmon is a special fish. Its high fat content may sound unhealthy, but is actually great for your body as it ensures that you stay healthy in both heart and mind with all of the healthy Omega-3s in its flesh. This also is great because it keeps the fish moist and delicious in more extreme temperatures than other fish, allowing you to cook it in more creative ways than you would be able to with other flaky fish.

This recipe for salmon with chimichurri sauce and potatoes is a great example of this, and something you’ll be able to enjoy no matter the occasion. The salmon itslef is only dressed with some salt and pepper – it doesn’t need anything more than that.

That’s because the salmon is flavorful enough that all you need to do is accentuate its natural flavors with only those two ingredients. Another thing that’s great about salmon is that it is so moist that you can just cook it on top of the stove with some oil – It’s very difficult to overcook salmon, so don’t be afraid to get it cooked!

The chimichurri sauce has only a few ingredients- red onion, oregano, parsley, vinegar, and olive oil- which makes it so great as both it and the salmon are simple and amazing!
