Quinoa Fried Rice
Put that leftover quinoa to work!
- 1 tbsp sesame oil
- 1 1/2 cups cooked quinoa
- 1/2 cup carrot chopped
- 1/2 cup edamame
- 2 cloves garlic crushed
- 2 eggs
- 2 tbsp soy sauce
- 1/2 tspn pepper
- 1 green onion chopped
Heat sesame oil in a pan over medium-high heat.
Add the quinoa and cook for 2-3 minutes.
Add the carrot, edamame, and garlic and mix well.
Create a hole in the middle and crack the eggs in the middle and scramble before mixing into the quinoa.
Add the soy sauce and cook for 1-2 minutes. Finish by mixing in the pepper and green onion before serving.
