Carrot and Chickpea Veggie Burger

An easy and delicious veggie burger made with chickpeas for a meaty textured patty.

Ingredients

  • 15.5 oz chickpeas drained and rinsed
  • 1 1/2 cups oats
  • 1/2 cup red onion diced
  • 1 egg
  • 1 tspn salt
  • 1/2 tspn pepper
  • 1/2 tspn garlic powder
  • 1 tspn olive oil
  • 1/2 lemon juiced
  • 1 tbsp olive oil

Burger Toppings

  • burger bun
  • tomato
  • 1 head butter lettuce
  • red onion
  • avocado
  • mustard to taste

Instructions

  1. In a food processor, combine chickpeas, oats, carrots, red onion, egg, salt, pepper, garlic powder, and olive oil. Blend just until combined.

  2. Add lemon juice and blend again until well-combined.

  3. Scoop out a handful of the mixture and form into patties.

  4. Heat a tablespoon of olive oil over medium-high heat.

  5. Cook the patty 4-5 minutes on each side, or until golden brown.

  6. Assemble with your favorite burger toppings.
