Three-Ingredient Green Beans
The only thing standing between you and this dish is 15 minutes.
Ingredients
- green beans 2 1/2 lbs
- 2 large leeks
- 1 1/2 cups olive oil
- 1 teaspoon kosher salt plus more
- 3 lemons
- 1/2 teaspoon freshly ground black pepper
Instructions

Wash and trim your green beans.

Bring a pot of salted water to boil.

Add green beans and boil for 5-7 minutes.

Remove the green beans and place in an ice bath to cool.

Remove the tops of the leeks and use for another recipe.

Thinly slice the green and white parts of the leeks and set aside.

Zest and juice lemons.

Heat olive oil in a pan over medium heat.

Add leek slices and fry for 5-7 minutes or until crispy. Remove and drain on a paper towel.

Now, remove the green beans from the icebath and dry them off.

Gently place in the olive oil, seasoning with salt, pepper, and lemon zest.Cook for 7 minutes then add lemon juice and toss to coat.

Plate your green beans and top with crispy fennel.

Garnish with extra lemon wedges if you wish.
