Panini with Sauteed Mushrooms and Gruyere
This Italian-style grilled cheese is a meatless marvel.
Ingredients
- 1 tbsp butter
- 1 pkg mushrooms sliced
- 4 tsp Dijon mustard
- 8 slices whole wheat bread
- 1/2 bag fresh spinach
- 1/4 cup roasted red bell pepper sliced
- 1/4 cup onion chopped
- 1 cup Gruyére cheese shredded
- 2 tbsp butter melted

First, heat the butter in a large nonstick skillet, then add the mushrooms, and sauté for about 5-6 minutes.

Spread mustard on 4 slices of bread, and layer each with 6 spinach leaves, 1 tablespoon pepper, 1 tablespoon onion, 1/4 cup cheese, and 1/4 cup mushrooms. Top each off with the remaining bread.

Brush with the melted butter over both sides of each sandwich. Heat a large nonstick skillet over medium-high heat and place the sandwiches in the pan. Place another skillet on top of sandwiches and cook for 2-3 minutes on each side until they're golden brown and the cheese has melted. If you're using a panini press, brush sandwiches with butter as before; place them on the tray, close the lid, and let them cook for at least 2 minutes or whenever they reach your preferred level of meltiness.
