The trick is a thin, seasoned batter that bakes into a shell sturdy enough to hold onto a proper buffalo glaze without going soggy. Give it a double bake and a quick toss in butter-spiked hot sauce, and even the diehard wing fans at your table will be reaching for seconds.

Ingredients

  • 1 large head cauliflower cut into bite-size florets
  • 1 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoons garlic powder
  • 1 teaspoons onion powder
  • 1 teaspoons smoked paprika
  • 0.5 teaspoons salt
  • 0.3 teaspoons black pepper
  • 1 cups milk or buttermilk
  • 0.5 cups buffalo hot sauce such as Frank's RedHot
  • 2 tablespoons unsalted butter melted
  • 1 tablespoons honey optional, balances the heat
  • 0.5 cups ranch or blue cheese dressing for serving
  • 2 celery stalks cut into sticks, for serving

Instructions

  1. Preheat and Prep: Preheat your oven to 450°F (230°C) and line a large baking sheet with parchment paper, or grease it lightly so the batter doesn't stick.
  2. Whisk the Batter: In a large mixing bowl, whisk together 1 cups all-purpose flour, 2 tablespoons cornstarch, 1 teaspoons garlic powder, 1 teaspoons onion powder, 1 teaspoons smoked paprika, 0.5 teaspoons salt, and 0.3 teaspoons black pepper. Slowly whisk in 1 cups milk (or buttermilk) until the batter is smooth and pourable, like a thin pancake batter.
  3. Coat the Cauliflower: Add 1 large head cauliflower, cut into bite-size florets to the bowl and toss gently until every floret is evenly coated in batter, letting the excess drip off before moving on.
  4. First Bake: Arrange the coated florets in a single layer on the baking sheet, leaving space between pieces so they crisp instead of steam.
  5. Flip and Bake Again: Flip each floret over and return the pan to the oven so both sides turn golden and crisp.
  6. Mix the Buffalo Sauce: While the cauliflower finishes baking, whisk together 0.5 cups buffalo hot sauce (such as Frank's RedHot), 2 tablespoons unsalted butter, melted, and 1 tablespoons honey (optional, balances the heat) in a small bowl until smooth.
  7. Toss in the Sauce: Transfer the baked florets to a large bowl, pour the buffalo sauce over the top, and toss gently until every piece is glossy and coated.
  8. Final Bake: Spread the sauced florets back onto the baking sheet in a single layer and return to the oven so the sauce sets slightly and caramelizes at the edges.
  9. Serve: Plate the bites hot and serve alongside 0.5 cups ranch or blue cheese dressing, for serving and 2 celery stalks, cut into sticks, for serving for dipping and crunch.
