Cauliflower Chili is Pretty to Look at and Delicious to Eat

Cauliflower Chili

Beef and veggies served up in a hearty, spicy bowl!

Ingredients

  • 2 tbsp olive oil
  • 3/4 lb ground beef
  • 3/4 lb Italian turkey sausage
  • 2 cups diced onions
  • 7 tbsp chili powder
  • 1 tbsp dark cocoa powder unsweetened
  • 6 garlic cloves
  • 2 tbsp ground cumin
  • 1 tbsp thyme leaves dried
  • 1 tbsp oregano dried
  • 2 cans crushed tomatoes
  • 12 oz water
  • 1/4 cup tomato paste
  • 1 1/2 lb riced fresh cauliflower
  • 3 cans red kidney beans drained and rinsed
  • salt and pepper to taste

Instructions

  1. First, heat the oil in a large pot on medium-high heat until it shimmers. Then add the onions and cook 'em until they turn translucent.  

  2. Add the garlic and meats (make sure the sausages are removed from their casings) and cook it all until they're lightly browned. Use a big spoon or potato masher to mash up the meat while it's cooking. 

  3. When the meat has browned, add all of the spices and herbs and cook for about 10 more minutes. Then add tomatoes with their juice, water, cocoa powder, and tomato paste and cook on medium heat for another 30 minutes. Finally, add the cauliflower and beans and cook for 10 more minutes to heat everything through.  

  4. Add salt and pepper to taste. If you want to get the best flavor, leave it in the fridge overnight and then slowly heat it back up over low heat on the stovetop or in a slow cooker on low.
