Cheddar and Brie Apple Beer Soup
Try this creamy soup on those cold nights.
Ingredients
- 2 cups low-sodium veggie broth
- 1 cup whole milk
- 1 cup shredded sharp cheddar cheese
- 8 ounces brie rind removed + cubed
- 1 sweet onion chopped
- 2/3 cup apple cider
- 1/4 cup flour
- 2 small Honeycrisp apples or 1 large chopped
- 1 beer 12 oz.
- 2 tablespoons olive oil
- 2 teaspoon fresh thyme chopped or 1/2 teaspoon dried
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- Toasted pumpkin seeds for topping
Instructions

Heat olive oil in a pot over medium heat. Add chopped onion, salt, pepper, brown sugar, and cook for 5 minutes.

Now add apple cider to deglaze and let reduce.

When the liquid is reduced by half, add cubed apple, thyme, and beer to deglaze again. Now add your veggie broth and cayenne, simmering for 5-10 minutes.

In a bowl, mix flour with the whole milk until well-combined.

Puree the soup until smooth. Whisk in the milk mixture and boil for 3-5 more minutes.

Stir in cheddar and brie until melted and smooth.

Ladle soup into deep bowls, top with whatever your heart desires.
