Chicken Parmigiana is a comforting dish that feels familiar and satisfying. Crispy chicken, rich tomato sauce, and melted cheese come together in a way that feels hearty without being heavy. Ingredients

For the chicken

  • 2 large chicken breasts sliced in half lengthwise
  • 1 cup breadcrumbs
  • 1 half cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 eggs
  • 2 tablespoons milk
  • Olive oil for frying

For the topping

  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat the oven to 200°C and lightly grease a baking dish.
  2. In a shallow bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and black pepper.
  3. In another bowl, whisk the eggs with milk. Dip each piece of chicken into the egg mixture, then coat evenly with the breadcrumb mixture.
  4. Heat olive oil in a large pan over medium heat. Fry the chicken until golden and cooked through, about 4 to 5 minutes per side.
  5. Place the cooked chicken in the baking dish and spoon marinara sauce over each piece. Sprinkle mozzarella cheese on top.
  6. Bake for 15 to 20 minutes, until the cheese is melted and bubbly.
  7. Garnish with fresh herbs and serve hot.
