Date Coconut Power Balls

- 1 cup rolled oats
- 1/2 cup sliced almonds
- 1 1/2 medjool dates pitted
- 1/4 cup almond butter
- 3 tablespoons hemp seeds
- 2 tablespoons golden flax seeds
- 2 tablespoons cocoa nibs
- 1 tablespoon cocoa powder
- 1 tablespoon coconut oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- unsweetened shredded coconut for coating
Preheat the oven to 350 degrees. Spread oats and almonds onto a baking sheet. Toast until the almonds are golden brown and the rolled oats are lightly golden, 7 to 8 minutes. Let cool.
In the bowl of a food processor, combine dates, almond butter, hemp seeds, flax seeds, cocoa nibs, cocoa powder, coconut oil, cinnamon, salt, and toasted oats and almonds. Blend until the dates are smooth and the mixture begins to stick together, forming large clumps.
Shape the mixture into balls, 1 teaspoon each and roll in shredded coconut to coat. Cover and chill the balls at least 2 hours before serving.
