Hearty and Delicious Vegan Jackfruit Taquitos

Jackfruit Taquitos

Ingredients

  • 1/2 tbsp tomato sauce
  • 1/2 tbsp soy sauce
  • 1/2 tsp hot sauce
  • 1/2 tsp chipotle chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1 tsp olive oil
  • 1 can jackfruit in brine drained and shredded
  • 8 corn tortillas
  • 1/2 cup guacamole prepared

Instructions

  1. Preheat your oven to 400°F.

  2. Mix the tomato paste, soy sauce, hot sauce, chili powder, paprika, cumin, and olive oil together in a medium bow. Toss the shredded jackfruit in the sauce and set it aside.

  3. Spread out the corn tortillas, and microwave them until they're warm and flexible. Fill each one with about 2 tablespoons of the jackfruit mixture from step 2, and roll 'em up to create large cigar-like shapes.

  4. Arrange the taquitos on a baking sheet and bake them in your preheated oven until they turn crispy and golden brown. Serve with your favorite guacamole.
