
Banana Bread Cake Truffles
Delicious banana bread balls coated in chocolate.
Ingredients
Banana Bread
- non-stick cooking spray
- 3 ripe bananas
- 2/3 stick unsalted butter
- 1/2 cup granulated sugar
- 1 large egg beaten
- 1 tspn vanilla extract
- 1 tspn baking soda
- 1 tspn kosher salt
- 1 1/2 cups flour
Cream Cheese Frosting
- 1/2 stick unsalted butter
- 4 oz cream cheese softened
- 3/4 cup powdered sugar
- 1 tspn vanilla extract
Assembly
- 2 cups dark chocolate chips
- 3 tbsp coconut oil
- 36 banana chips
Instructions

Banana bread: Preheat your oven to 350°F and grease a loaf pan with the non-stick spray.

Mash the bananas in a large bowl until smooth. Add melted butter and mix well. Add sugar, egg, vanilla, baking soda, salt, and flour. Mix well.

Pour the batter into the loaf pan and smooth out the top.

Bake for 50 minutes, or until a toothpick a toothpick comes out clean in the center. Cool completely.

Cream cheese frosting: Whip together the butter and cream cheese with a hand mixer in a large bowl until smooth. Incorporate the powdered sugar and vanilla extract.

Finely crumble the banana bread into another large bowl to make about 6 cups.

Add the cream cheese frosting and mix well.

Line a baking sheet with parchment paper.

Portion the banana bread mixture using an ice cream scoop and roll into 24 balls. Place on the baking sheet and chill for 10 minutes.

In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals until completely melted, stirring in between intervals.

Dip each banana bread truffle in the melted chocolate and top with a banana chip. Let cool and set for 15 minutes.
