Ice cream sandwiches

Ingredients
For the cookies:
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup chocolate chips or chunks
For the filling:
- Your choice of ice cream slightly softened
Instructions
Prepare the Cookie Dough:

In a medium bowl, whisk together the flour, baking soda, and salt.

In a larger bowl, cream the softened butter, granulated sugar, brown sugar, and vanilla extract until the mixture is light and fluffy.

Add the egg to the butter-sugar mixture and mix until well combined.

Gradually add the dry ingredient mixture to the wet ingredients until combined.

Fold in the chocolate chips or chunks.
Chill the Dough:

Cover the cookie dough and refrigerate for about 1-2 hours or until it's firm. Chilling the dough helps prevent the cookies from spreading too much while baking.
Bake the Cookies:

Preheat your oven to 350°F (175°C).

Line a baking sheet with parchment paper.

Scoop out portions of dough (about 1-2 tablespoons each) and roll them into balls. Place the dough balls on the baking sheet, leaving enough space between them to allow for spreading.

Flatten each dough ball slightly with your hand or the bottom of a glass.

Bake in the oven for 10-12 minutes or until the cookies are golden around the edges.

Remove the baking sheet from the oven and allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
Assemble the Ice Cream Sandwiches:

Once the cookies have cooled completely, take a scoop of slightly softened ice cream and place it onto the flat side of one cookie.

Gently press another cookie, flat side down, onto the ice cream to create a sandwich.

If desired, roll the sides of the ice cream in sprinkles, chocolate chips, or crushed nuts to add some extra flavor and texture.
Freeze and Serve:

Place the assembled ice cream sandwiches on a baking sheet lined with parchment paper and put them in the freezer for at least 1-2 hours or until the ice cream is firm again.

Once the sandwiches are fully frozen, you can wrap them individually in plastic wrap or store them in an airtight container in the freezer until ready to serve.
