Loaded Nachos with Beef and Jalapeños

Loaded nachos are one of those dishes that come together fast and disappear even faster. The mix of seasoned beef, melted cheese, and spicy jalapeños creates a rich, satisfying bite every time. It’s perfect for sharing with friends or serving as a casual treat at home. Everything bakes together in one tray, making it simple and fun to prepare.

Loaded Nachos with Beef and Jalapeños

Ingredients

For the beef:

  • 1 tablespoon oil
  • 500 g ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 2 tablespoons tomato paste
  • 2 tablespoons water

For assembling:

  • 1 large bag tortilla chips
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sliced jalapeños fresh or pickled
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions

Optional toppings:

  • Sour cream
  • Guacamole
  • Salsa

Instructions

  1. Heat oil in a pan over medium heat. Add chopped onion and cook until soft. Stir in garlic and cook briefly. Add ground beef and cook until browned, breaking it apart as it cooks.
  2. Add salt, pepper, paprika, cumin, tomato paste, and water. Mix well and cook for another 5–7 minutes until the beef is flavorful and slightly thickened.
  3. Preheat the oven to 180°C. Spread a layer of tortilla chips on a baking tray.
  4. Spoon the cooked beef evenly over the chips. Sprinkle cheese generously on top, followed by jalapeños, tomatoes, and olives.
  5. Place the tray in the oven and bake for about 10–12 minutes until the cheese is fully melted and bubbling.
  6. Remove from the oven and sprinkle green onions on top. Add sour cream, guacamole, or salsa as desired. Serve immediately while warm and crispy.
