Make a Pot of Apple Mango Chutney!

Apple Mango Chutney

Try this fruit-filled chutney in the Instant Pot.

Ingredients

  • 4 cups mango peeled, seeded and diced
  • 2 cups apples peeled, cored and chopped
  • 1 1/4 cups white sugar
  • 1 cup cider vinegar
  • 1 1 inch piece fresh ginger root minced
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • 1 teaspoon chili flakes
  • 1 teaspoon cinnamon
  • 4 green cardamom pods
  • 4 whole cloves
  • 1/2 teaspoon ground black pepper
  • 1 bay leaf

Instructions

  1. Combine all of the ingredients in an Instant Pot. Close and lock the lid. Set the pot to high pressure on a 12 minute timer. Allow 10 to 15 minutes for pressure to build.

  2. Let the pressure slow-release for 10 minutes, then carefully open the valve to release the rest. Remove the lid and switch the Instant Pot to sauté and cook the chutney until it thickens, about 10 minutes.

  3. Let cool completely, then store in clean jars.
