Ingredients

For the Bruschetta Base:

  • 1 French baguette or Italian loaf sliced into 1/2-inch thick pieces
  • 2 tablespoons olive oil for brushing
  • 1 clove garlic peeled

Instructions

Prepare the Bruschetta Topping:

  1. In a bowl, combine the diced tomatoes, roasted red peppers, minced garlic, chopped basil, and extra-virgin olive oil.
  2. Season the mixture with salt and black pepper to taste. Set aside to allow the flavors to meld while you prepare the other components.

Make the Goat Cheese Spread:

  1. In a separate bowl, combine the creamy goat cheese, Greek yogurt, fresh lemon juice, and honey (if using). Mix until smooth and well combined.
  2. Season the goat cheese spread with a pinch of salt and black pepper. Adjust the seasoning to your taste.

Toast the Bruschetta Base:

  1. Preheat your oven to 350°F (175°C). Place the sliced bread on a baking sheet.
  2. Brush one side of each bread slice with olive oil and toast them in the preheated oven for about 5-7 minutes or until they become golden brown and crispy.
