Ingredients

For the Steak Bites:

  • 1 pound 450g of sirloin or ribeye steak cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

For the Gravy:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon Worcestershire sauce
  • Salt and black pepper to taste

Instructions

Marinate the Steak Bites:

  1. In a bowl, combine the steak bites, olive oil, minced garlic, paprika, dried thyme, salt, and black pepper. Toss to coat the steak pieces evenly. Allow the steak to marinate for at least 30 minutes at room temperature. You can also marinate it longer in the refrigerator for more flavor.

Cook the Steak Bites:

  1. Heat a large skillet or pan over medium-high heat. Add a little extra olive oil if needed.
  2. Once the skillet is hot, add the marinated steak bites in a single layer, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side for medium-rare, or longer if you prefer your steak more well-done.
  3. Remove the steak bites from the skillet and set them aside on a plate.

Make the Gravy:

  1. In the same skillet, add 2 tablespoons of butter and let it melt.
  2. Stir in 2 tablespoons of all-purpose flour and cook for 1-2 minutes until it becomes a light golden brown, stirring constantly.

Add Broth and Cream:

  1. Slowly pour in 1 cup of beef broth while stirring continuously to avoid lumps.
  2. Add 1/2 cup of heavy cream and Worcestershire sauce. Continue to stir until the mixture thickens and comes to a simmer. This will take about 3-5 minutes.

Season the Gravy:

  1. Taste the gravy and adjust the seasoning with salt and black pepper as needed. You can also add a bit more Worcestershire sauce if you like.

Combine and Serve:

  1. Return the cooked steak bites to the skillet with the gravy. Allow them to heat through for a minute or two.
  2. Serve your steak bites with gravy over mashed potatoes, rice, or your favorite side dish. Garnish with fresh herbs like parsley if desired.
