Old-Fashioned Biscotti, Perfect with a Cup of Coffee

Ingredients

  • ½ cup vegetable oil
  • 1 cup white sugar
  • 3 ¼ cups all-purpose flour
  • 3 eggs
  • 1 tablespoon baking powder
  • 1 tablespoon anise extract or 3 drops anise oil

Instructions

  1. Turn the oven up to to 375 F. While that's heating up, either grease two cookie sheets or line them with parchment paper.

  2. In a medium bowl, add the oil, eggs, sugar and anise flavoring. Beat that stuff together until it's well blended. Combine the flour and baking powder, then stir that combo into the egg mixture. You should end up with a nice, thick dough. Divide that dough into two pieces and form each into a roll as long as a cookie sheet. Press the rolls onto the prepped sheets to 1/2 inch thickness.

  3. Bake the sheets for 25 to 30 minutes in the preheated oven, until golden brown. Take the rolls off the sheets and let them cool on a wire rack. When you can safely touch the rolls, slice each one crosswise into 1/2 inch slices. Place the slices back onto the sheets, cut side up. Bake the sheets again for 6 to 10 minutes on each side. Slices should be lightly toasted.
