Ingredients

  • 8 oz 225g noodles (spaghetti, rice noodles, or your favorite type)
  • 1/4 cup peanut butter creamy or chunky
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar or lime juice
  • 2-3 cloves garlic minced
  • 1 tbsp honey or maple syrup
  • 1/2 tsp chili flakes optional for some heat
  • 1/4 cup hot water
  • 2 tbsp sesame oil or vegetable oil
  • 1/4 cup chopped peanuts for garnish
  • 2 green onions sliced (for garnish)
  • Fresh cilantro or parsley optional for garnish
  • Sesame seeds optional for garnish

Instructions

Cook the Noodles:

  1. Boil a pot of water and cook the noodles according to the package instructions. Once cooked, drain and set aside.

Prepare the Peanut Sauce:

  1. In a bowl, mix together the peanut butter, soy sauce, rice vinegar or lime juice, honey or maple syrup, and chili flakes (if using).
  2. Gradually add hot water while stirring until the sauce reaches a smooth and pourable consistency.

Cook the Garlic:

  1. In a large pan, heat sesame oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

Combine Noodles and Sauce:

  1. Add the cooked noodles to the pan with the garlic. Pour the peanut sauce over the noodles and toss everything together until the noodles are well coated.

Garnish and Serve:

  1. Transfer the noodles to a serving bowl. Garnish with chopped peanuts, green onions, fresh cilantro or parsley, and sesame seeds if desired.
