Pineapple Ice Cream Float
A delicious blend of pineapple chunks, juice and coconut milk to make a creamy pineapple ice cream float.

Ingredients
- 3 1/2 cups pineapple juice
- 3/4 cup granulated sugar
- 4 cups frozen pineapple chunks
- 13.5 oz coconut milk

Prepare the ice cream maker according to directions.

For the simple syrup, place a sauce pan over medium heat. Combine ½ cup pineapple juice and the sugar. Bring to a boil and stir to dissolve the sugar. Remove from heat and let cool.

Use a high speed blender to combine the pineapple chunks, coconut milk, and cooled pineapple simple syrup. Blend until smooth.

Transfer the blended mixture to the ice cream maker and churn for 30 minutes.

Fill glasses with ½ cup pineapple juice.

Pipe the pineapple ice cream on top of the pineapple juice until it reaches the top. Enjoy.
