Roasted Butternut Squash
A little olive oil, some garlic, and some chopped squash, and you've got a perfect side dish.
- 1 butternut squash peeled, seeded, and cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 cloves garlic minced
- salt and ground black pepper to taste
Turn the oven up to 400 F.
In a big bowl, toss the squash around with the olive oil and garlic, then season it with salt and black pepper. Arrange the prepped squash cubes on a baking sheet.
Roast the cubes in the oven for 25 to 30 minutes. The squash should be tender and lightly browned.
