This slow cooked chicken curry is designed for days when you want a proper meal without standing in the kitchen for hours. The chicken becomes tender as it cooks slowly in a deeply flavored sauce made with warm spices. Everything comes together in one pot with minimal effort after the initial prep. It is an easy way to have a comforting, homemade curry ready when your schedule feels full.

Slow Cooked Chicken Curry

Ingredients

  • 750 g chicken pieces bone-in or boneless
  • 3 tablespoons vegetable oil
  • 2 medium onions finely sliced
  • 3 cloves garlic minced
  • 1 tablespoon grated ginger
  • 2 medium tomatoes blended or finely chopped
  • 1 cup yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon red chili powder
  • Salt to taste
  • 1 half cup water
  • Fresh coriander for garnish

Instructions

  1. Heat oil in a heavy pot over medium heat. Add the onions and cook until golden brown.
  2. Add garlic and ginger and cook until fragrant.
  3. Stir in the tomatoes and cook for 5 to 7 minutes until the oil begins to separate.
  4. Lower the heat and add yogurt, turmeric, cumin, coriander, chili powder, and salt. Stir well until the spices are evenly mixed.
  5. Add the chicken and coat it thoroughly with the sauce.
  6. Pour in water, cover the pot, and cook on low heat for about 2 hours, stirring occasionally.
  7. Once the chicken is tender and the sauce has thickened, remove from heat.
  8. Garnish with fresh coriander and serve hot with rice or flatbread.
