Ingredients

  • 1 1/2 cups all-purpose flour
  • two teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • four large eggs
  • one teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 cup fresh strawberries diced
  • 1 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and granulated sugar together until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream and mixing until just combined.
  6. Gently fold in the diced strawberries, blueberries, raspberries, and blackberries, being careful not to crush the berries.
  7. Stir in the lemon zest and lemon juice.
  8. Pour the batter into the prepared cake pan, spreading it evenly.
  9. Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
  11. Once cooled, dust the top of the cake with powdered sugar before serving.
  12. Slice and serve the cake with whipped cream, if desired.
