Two Cheese Squash Casserole
A soft and savory meatless casserole.

Ingredients
- 4 lbs squash halved length-wise and sliced
- 4 tbsp butter
- 1 large onion chopped
- 2 cloves garlic chopped
- 1 1/2 cup bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 cup shredded cheddar
- 1/2 cup chives chopped
- 1 cup parsley chopped
- 1 container of sour cream
- 1 tspn salt
- 1 tspn pepper
- 2 eggs whisked
- 1/4 tspn garlic salt
Instructions

Bring water to a boil in a large pot and boil the squash until softened. Drain and place on a paper towel.

Melt 2 tbsp butter in a pan over medium-high heat and cook the onions until tender. Add garlic and mix.

Mix in the squash, 1 cup bread crumbs, 1/2 cup Parmesan, and cheddar cheese.

Add the chives, parsley, sour cream, salt, pepper, eggs, and garlic salt. Mix well and pour into a casserole dish.

In another bowl, combine 1/2 cup bread crumbs, 2 tbsp butter, and 1/2 cup Parmesan cheese and mix well. Spread evenly on top of the squash casserole.

Bake for 35-40 minutes at 350 degrees Fahrenheit.
