Two Cheese Squash Casserole

A soft and savory meatless casserole.

Ingredients

  • 4 lbs squash halved length-wise and sliced
  • 4 tbsp butter
  • 1 large onion chopped
  • 2 cloves garlic chopped
  • 1 1/2 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded cheddar
  • 1/2 cup chives chopped
  • 1 cup parsley chopped
  • 1 container of sour cream
  • 1 tspn salt
  • 1 tspn pepper
  • 2 eggs whisked
  • 1/4 tspn garlic salt

Instructions

  1. Bring water to a boil in a large pot and boil the squash until softened. Drain and place on a paper towel.

  2. Melt 2 tbsp butter in a pan over medium-high heat and cook the onions until tender. Add garlic and mix.

  3. Mix in the squash, 1 cup bread crumbs, 1/2 cup Parmesan, and cheddar cheese.

  4. Add the chives, parsley, sour cream, salt, pepper, eggs, and garlic salt. Mix well and pour into a casserole dish.

  5. In another bowl, combine 1/2 cup bread crumbs, 2 tbsp butter, and 1/2 cup Parmesan cheese and mix well. Spread evenly on top of the squash casserole.

  6. Bake for 35-40 minutes at 350 degrees Fahrenheit.
