This Chilean classic will really throw you for a loop.
- 2 cups pisco
- 1 cup fresh lime juice
- 1 egg white
- 1 ⅓ cups confectioners' sugar
- 2 cups crushed ice
- aromatic bitters
In a blender, blend the pisco, lime juice, egg white, sugar, and ice for about a minute, or until it's all smooth. Pour the drink into fluted glasses, topping each with 1 to 2 dashes of aromatic bitters.
