Chocolate Filled Banana Muffins

Ingredients

  • 2 Bananas
  • 1 egg
  • 1/3 cup Vegetable Oil
  • 1/2 cup Sugar
  • 1/4 cup Whole Milk
  • 1 tspn Vanilla Extract
  • 1 1/2 cups All-Purpose Flour
  • 1 tspn Baking Powder
  • 1/2 tspn Baking Soda
  • 1/4 tspn Salt
  • 1/4 cup Chocolate Sprinkles

Chocolate Filling

  • 1/2 cup Semi-Sweet Chocolate
  • 1/2 cup Heavy Cream Hot

Instructions

  1. Place the bananas on a baking tray and bake with peel on for 15-20 minutes on 300 degrees Fahrenheit to ripen. Remove peel and mash in a mixing bowl.

  2. Add one egg, vegetable oil, sugar, milk, vanilla extract and mix well until it becomes a smooth consistency.

  3. Sift the flour, baking powder, baking soda, and salt into the puree and mix well. Then fold in the chocolate sprinkles.

  4. Grease the muffin pans and scoop the muffin mix into each space and back for 20-25 minutes at 350 degrees Fahrenheit.

  5. Create the chocolate filling by combining the chocolate and hot heavy cream. Let it sit for 1 minute before stirring to mix.

  6. When the muffins are done baking, poke a whole about the width of your pinky finger at the top.

  7. Pour the chocolate filling into each hole and chill for at least one hour. Serve.
