Ingredients

  • 2 slices white sandwich bread torn into small pieces
  • 1/2 cup whole milk
  • 1 1/2 lbs ground turkey
  • 2 large eggs lightly beaten
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 8 slices thin pancetta finely chopped
  • 1/2 onion finely chopped
  • 3 cloves garlic chopped
  • 1/4 cup ketchup
  • 1 cup flat-leaf parsley
  • 1/2 tspn dried oregano
  • 1/4 cup Italian-seasoned breadcrumbs
  • 1/4 tspn kosher salt
  • ground black pepper

Instructions

  1. Preheat your oven to 500℉.

  2. Soak the bread pieces in the milk for 10 minutes in a large bowl.

  3. Add in ground turkey, eggs, cheese, chopped pancetta, onion, garlic, ketchup, flat-leaf parsley, dried oregano, breadcrumbs, salt, and pepper. Use your hands to mix well.

  4. Shape the meatloaf into a loaf, about 8 inches by 5 inches and place on a baking sheet.

  5. Bake 15 minutes and reduce heat to 325℉ and drizzle some more ketchup on top. Bake until temperature reads 165℉ in the center of the loaf. Let rest for 10 minutes before serving.
