Pepperoni Pizza Mac and Cheese

Ingredients

  • 1 lb penne pasta
  • 2 cups whole milk
  • 1 1/2 cups grated mozzarella
  • ¼ cup tomato paste
  • 2 oz pepperoni
  • 3 tbsp unsalted butter
  • 3 tbsp flour
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes

Instructions

  1. Preheat the oven to 375 degrees.
  2. Bring a large pot of salted water to a boil. Cook pasta according to package instructions.
  3. In a skillet, melt butter. Now whisk in flour until dissolved. Cook for 1 minute.
  4. Add in tomato paste and stir to combine. Now, add milk, salt, oregano, and red pepper flakes. Whisk until smooth and simmer for 2 minutes.
  5. Mix in half the cheese and drained pasta. Top with pepperoni and remaining cheese.
  6. Bake for 10 minutes, or until everything is brown, bubbly, and golden.
  7. Serve and enjoy! 😀
