Cauliflower and Black Bean Tacos

Ingredients
- 2 tbsp lime juice
- 2 tbsp chipotles in adobo
- 2 tbsp honey
- 2 cloves garlic
- 1/2 tspn salt
- 2 cups cauliflower crowns
- 1 red onion sliced
- tortilla
Toppings
- refried black beans
- avocado pitted and sliced
- red cabbage julienned
- jalapeno sliced
- queso fresca
- cilantro chopped
- lime wedges
Instructions

Use a blender to blend together the lime juice, chipotles, honey, garlic, and salt until smooth.

Combine the sauce with the cauliflower, coating it evenly and well.

Spread the coated cauliflower evenly on top of a baking sheet and then place the sliced red onion on top. Roast at 450 degrees Fahrenheit for 18-20 minutes.

Prepare the toppings to make it easy for you and any guests to create their own tacos with their preferred toppings.

Paste a generous amount of the refried beans to the middle of a tortilla and top it with the roasted cauliflower and onion. Add your favorite toppings and enjoy.
