The trick to perfectly juicy, melt in your mouth beets? Baking in a foil cocoon.
- 2 lbs raw beets trimmed
- 3 tablespoons olive oil
- kosher salt
- cracked black pepper
Preheat the oven to 425 degrees.
Rinse and trim the tops off your beets.
Line a baking sheet with aluminum foil. Add beets to the foil and toss with olive oil, salt, and pepper. Create a large packet with your foil to completely surround the beets.
Bake for 45 minutes, or until the beets are tender.
Remove from oven and let cool slightly.
Use a paper towel to rub the skins off the beets and cut them into desired sizes.
Serve as is or alongside your favorite dish.
