Classic Canadian Poutine
This combination of the gravy and fries is to die for.

Ingredients
- 3 large russet potatoes
- 3 tbsp olive oil
- 1 1/2 tspn salt
- 1 tspn pepper
- 6 tbsp butter
- 1/4 cup flour
- 2 1/2 cups beef stock
- 2 tspn Worcestershire sauce
- 3 tbsp corn starch
- 2 tbsp water
- 1 1/2 cups cheese curds
Instructions

Cut the potatoes into fries and place in a bowl. Drizzle the olive oil on the potatoes, 1 tspn salt, and 1/2 tspn pepper. Mix well. Place on a baking sheet and bake for 25 minutes at 450 degrees Fahrenheit.

In a sauce pan, combine the butter and flour on medium-high heat and whisk until they are mixed well and the butter starts to turn brown.

Add the beef stock, 1/2 tspn salt, and 1/2 tspn pepper and stir. Bring to a simmer.

Create a corn starch slurry by combining the corn starch and water. Slowly pour into the gravy and continue stirring until the gravy becomes a thick consistency.

Add the cheese curds to the baked fries. Pour the gravy on top and mix well.
