Nicioise Gnocchi Salad

Ingredients
- 1/4 cup olive oil extra virgin
- 2 tbsp white wine vinegar
- 1 tbsp minced shallot
- 1 1/2 tsp Dijon mustard
- 3/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 2 cups frozen whole green beans
- 1 pkg potato gnocchi
- 1 jar marinated baby artichoke hearts drained and halved
- 1 jar high-quality tuna fillets packed in olive oil drained and flaked
- 3/4 cup pitted kalamata olives drained and halved
- 1/2 cup jarred sliced roasted red bell peppers drained
- 2 large soft-cooked eggs halved
Instructions

Whisk oil, vinegar, shallots, mustard, salt, and pepper together in a small bowl. Put it aside for the moment.

Cook the green beans according to package directions and drain them.

Cook the gnocchi according to their directions and drain. Toss the gnocchi with 2 tablespoons of the dressing you made in step one. Arrange the gnocchi, green beans, artichokes, tuna, olives, roasted peppers, and, if desired, egg halves on a serving platter. Drizzle it with the remaining dressing.
