Ingredients

  • 3 pieces center cut cod 6 oz. each
  • green beans 1 lb, trimmed
  • 1 cup potato chips crushed
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 1 lemon
  • salt and pepper

Instructions

  1. Preheat the oven to 500 degrees.
  2. In a bowl, toss green beans with olive oil, salt, pepper, and Old Bay. Set aside.
  3. Drizzle the cod with olive oil. Season with salt. Place on a sheet pan and spread the green beans over the open space.
  4. Mix mayonnaise with the Old Bay and lemon juice in a small bowl until smooth.
  5. Spread this mixture over the top of your fish then sprinkle potato chips over. Press down firmly on the fish to get the coating to stick.
  6. Roast in the oven for 10 minutes.
  7. Serve and enjoy! D
