Cheesy Spinach and Bacon Stuffed Potatoes

These potatoes stuffed with cheesy spinach and bacon will make a great appetizer on your holiday dinner table!

Ingredients

  • 3 large russet potatoes
  • 4 oz cream cheese softened
  • 1/2 cup whole milk
  • 2 tbsp unsalted butter
  • 1 pkg frozen chopped spinach thawed, drained and squeezed dry
  • 5 thick-cut bacon slices cooked and crumbled
  • 1/4 cup finely chopped yellow onion
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz sharp Cheddar cheese shredded, divided
  • 1/3 cup sour cream
  • 1/4 cup sliced scallions

Instructions

  1. Preheat oven to 400°F. Pierce potatoes with a fork, and bake in preheated oven until tender, about 1 hour.

  2. Cool slightly, and cut each potato in half lengthwise. Scoop out flesh, leaving a 1/4-inch-thick shell. Combine warm potato flesh, cream cheese, milk, and butter in a medium bowl, and mash with a potato masher until combined. Stir in spinach, bacon, onion, salt, pepper, and 1 cup of the cheese until well combined.

  3. Divide spinach mixture among potato shells; sprinkle each evenly with remaining 1 cup cheese, and bake at 400°F until golden and bubbly, about 15 minutes. Top with sour cream and scallions.
