Tomato Herb Pie
An easy, delectable way to feed those hungry vegetarians coming to your dinner party.

Ingredients
- 2 medium tomatoes sliced
- 1/2 pt. baby tomatoes halved
- 1 package frozen puff pastry sheets
- 1/4 cup chopped chives
- 1/4 cup chopped herbs
- 8 oz shredded mozzarella
- 4 oz crumbled feta
- 1 garlic clove
- 1 tablespoon olive oil
- 3/4 teaspoon salt
Instructions

Preheat the oven to 400 degrees.

Slice tomatoes and place on paper towels. Season both sides with salt and let sit and dry out a bit for 30 minutes.

Next, roll out one of the pastry sheets. Take the other and cut into 4 strips, placing then around the perimeter of the rectangle.

Bake for 14 minutes until the pastry becomes golden brown.

Remove from oven and top the pastry with mozzarella, feta, and chives. Place tomatoes in layer or design and sprinkle herbs atop.

Bake for another 15 minutes so that the cheese gets bubbly.
