Chilled Pea Soup
This chilled pea soup is the best version of any and all pea soups!
Ingredients
- 1 tbsp olive oil
- 1 clove garlic
- 1 onion
- 200 g peas
- 300 ml chicken stock
- 50 ml double cream
- salt and pepper
- mint leaves
Instructions

Fry the garlic and onion with olive oil.

Boil the peas and chicken stock together with the onion and garlic.

Blend them in a blender with the cream.

Store the soup in the fridge for 30 minutes.

Garnish with salt, pepper, and mint leaves.
