Boiled Peanut Hummus
Hummus is usually made of chickpeas. But hey, if you can make a paste out of it, you can make hummus out of it!

Ingredients
- 1 cup shelled boiled peanuts
- 2 tbsp tahini
- 2 tbsp fresh lemon juice
- 1 tbsp fresh parsley chopped
- 1 tsp fresh garlic minced
- 1/4 tsp ground cumin
- 2 tbsp olive oil
- pinch of ground red pepper
- olive oil, shelled boiled peanuts for garnish
- pita chips for serving
Instructions

Process the first 7 ingredient ingredients in a food processor until they're chopped coarsely.

While the processor is still running, pour olive oil through the food chute in a slow, steady stream. Keep processing until the mixture turns smooth.

Stir in up to 5 Tbsp. water, 1 Tbsp. at a time, to reach your ideal spreading consistency. If you like, garnish the hummus with extra oil and peanuts. Serve with pita rounds or pita chips.
