Turkey Meatloaf
A flavor-packed easy-to-make turkey meatloaf.

Ingredients
- 2 slices white sandwich bread torn into small pieces
- 1/2 cup whole milk
- 1 1/2 lbs ground turkey
- 2 large eggs lightly beaten
- 1/4 cup grated Parmigiano-Reggiano cheese
- 8 slices thin pancetta finely chopped
- 1/2 onion finely chopped
- 3 cloves garlic chopped
- 1/4 cup ketchup
- 1 cup flat-leaf parsley
- 1/2 tspn dried oregano
- 1/4 cup Italian-seasoned breadcrumbs
- 1/4 tspn kosher salt
- ground black pepper
Instructions

Preheat your oven to 500℉.

Soak the bread pieces in the milk for 10 minutes in a large bowl.

Add in ground turkey, eggs, cheese, chopped pancetta, onion, garlic, ketchup, flat-leaf parsley, dried oregano, breadcrumbs, salt, and pepper. Use your hands to mix well.

Shape the meatloaf into a loaf, about 8 inches by 5 inches and place on a baking sheet.

Bake 15 minutes and reduce heat to 325℉ and drizzle some more ketchup on top. Bake until temperature reads 165℉ in the center of the loaf. Let rest for 10 minutes before serving.
