Grilled Peach Summer Salad

Ingredients

Marinade and Salad Dressing

  • 1/4 cup Balsamic Vinegar
  • 2 tbsp Olive Oil
  • 1/4 cup Honey
  • 2 tspn Salt
  • 1 tspn Ground Black Pepper

Salad

  • 2 Peaches
  • 2 Chicken Breasts
  • 1 lb Grape Tomatoes
  • 1 Slicked Cucumber
  • 1 Sliced Red Onion
  • 1 cup Pecans
  • Salad Greens

Instructions

  1. In a mixing bowl, add the balsamic vinegar, olive oil, honey, salt, and ground black pepper and mix well. Pour half of the mix into another bowl for later.

  2. Slice a peach in half and remove the pit.

  3. Brush the flesh side of the peaches with the balsamic vinegar mixture and place on a grill on medium high heat until the sugars on the peach flesh have caramelized with grill marks.

  4. Lightly coat both sides of the chicken breast with olive oil and season with salt and pepper to taste. 

  5. Place on grill on medium high heat for one minute and turn. Brush on a liberal amount of the balsamic marinade. Repeat on other side. Continue doing this every time the chicken breasts are turned. 

  6. When the chicken breasts are cooked all the way through, remove from grill.

  7. Slice the grilled peaches and chicken breasts into thin strips.

  8. In a large salad bowl, add in the salad greens, tomatoes, cucumbers, red onions, pecans, grilled peaches and chicken breasts. Pour in the other reserved salad dressing and mix well. Serve and enjoy!
