Ingredients

  • 1 pound short pasta
  • 1 cup thinly sliced shallots about 2 large
  • 4 ounces thick-cut ham about 4 slices, cut into thin strips
  • 1 cup frozen or fresh shelled peas
  • 1 cup heavy cream
  • 3 tablespoons olive oil
  • 2 tablespoons finely chopped fresh flat-leaf parsley
  • zest of 1 lemon
  • Kosher salt
  • Freshly ground black pepper
  • Freshly grated Parmesan for serving

Instructions

  1. Bring a large pot of salted water to boil. Cook pasta according to package instructions. Drain and reserve 1/2 cup pasta water.
  2. Next, heat olive oil in a skillet over medium heat. Add shallots and cook until transluscent, about 3 minutes. Season with salt then add ham and peas. Toss to coat and pour in cream. Cook for 5 minutes, or until the cream is thickened and reduced.
  3. Stir in lemon juice, parsley, salt and pepper.
  4. Add pasta to the pot with the reserved pasta water. Toss and cook for 2 minutes or until the pasta absorbs the flavors.
  5. Top with more parsley and Parmesan.
  6. Serve and enjoy! 😀
