Ham and Peas Pasta
A decadent weeknight pasta you'll enjoy making almost as much as you'll enjoy eating.

Ingredients
- 1 pound short pasta
- 1 cup thinly sliced shallots about 2 large
- 4 ounces thick-cut ham about 4 slices, cut into thin strips
- 1 cup frozen or fresh shelled peas
- 1 cup heavy cream
- 3 tablespoons olive oil
- 2 tablespoons finely chopped fresh flat-leaf parsley
- zest of 1 lemon
- Kosher salt
- Freshly ground black pepper
- Freshly grated Parmesan for serving
Instructions

Bring a large pot of salted water to boil. Cook pasta according to package instructions. Drain and reserve 1/2 cup pasta water.

Next, heat olive oil in a skillet over medium heat. Add shallots and cook until transluscent, about 3 minutes. Season with salt then add ham and peas. Toss to coat and pour in cream. Cook for 5 minutes, or until the cream is thickened and reduced.

Stir in lemon juice, parsley, salt and pepper.

Add pasta to the pot with the reserved pasta water. Toss and cook for 2 minutes or until the pasta absorbs the flavors.

Top with more parsley and Parmesan.
