Ingredients

  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 garlic cloves minced
  • 1 ½ cups BBQ sauce your favorite
  • 1 cup chicken broth
  • 1 can 14 oz diced tomatoes
  • 1 teaspoon smoked paprika optional
  • ½ teaspoon cumin
  • 1 teaspoon Italian seasoning
  • 12 oz penne pasta
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

Cook the Chicken

  1. Heat olive oil in a large pot over medium-high heat. Add the chicken pieces, season with salt, pepper, and smoked paprika (if using), and cook for about 6-8 minutes until the chicken is browned and cooked through. Once done, remove the chicken and set it aside.

Sauté the Onions and Garlic

  1. In the same pot, add the diced onion and minced garlic. Cook for about 2-3 minutes until softened and fragrant, scraping any brown bits from the bottom of the pot to add more flavor.

Add the Saucy Ingredients

  1. Pour in the BBQ sauce, chicken broth, and diced tomatoes with their juice. Stir everything together and add the cumin and Italian seasoning. Bring it to a simmer.

Cook the Pasta

  1. Add the penne pasta to the pot, making sure it's mostly submerged in the liquid. Bring it to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is tender and cooked through.

Add the Chicken and Cheese

  1. Once the pasta is cooked, return the chicken to the pot. Stir everything together, then sprinkle in the shredded cheddar cheese. Stir until the cheese is melted and the dish is nice and gooey.
