How to Make Sugar-Free Jam at Home

Ingredients

  • 4 cups of fresh or frozen berries strawberries, raspberries, blueberries, or a combination
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • 2-3 tablespoons chia seeds acts as a thickening agent
  • Optional: 1-2 tablespoons of a natural sweetener like stevia monk fruit, or erythritol (adjust according to taste)

Instructions

  1. Prepare the Berries: If using fresh berries, rinse them thoroughly under cold water and remove any stems or leaves. If using frozen berries, allow them to thaw completely.
  2. Cook the Berries: In a saucepan, combine the berries, lemon juice, and water. Bring the mixture to a gentle simmer over medium heat.
  3. Mash the Berries: Once the berries have softened, use a potato masher or the back of a spoon to mash them to your desired consistency. If you prefer a smoother jam, you can use an immersion blender to puree the mixture.
  4. Add Chia Seeds: Stir in the chia seeds and continue to simmer the mixture for another 5-10 minutes, stirring frequently. The chia seeds will absorb some of the liquid and help thicken the jam.
  5. Sweeten (Optional): If you prefer a sweeter jam, you can add a natural sweetener like stevia, monk fruit, or erythritol to taste. Start with a small amount and adjust as needed.
  6. Cool and Store: Remove the jam from the heat and let it cool completely. As it cools, it will thicken further. Once cooled, transfer the jam to sterilized jars or containers.
  7. Store: Store the sugar-free jam in the refrigerator for up to two weeks. You can also freeze it for longer storage. Make sure to leave some headspace in the jars if freezing, as the jam will expand as it freezes.
