Ingredients

  • cooking spray
  • 11.25 oz whole-wheat four
  • 2.25 oz flour all-purpose
  • 1/2 cup steel-cut oat such as McCann's
  • 2 tbsp brown sugar
  • 1 tbsp wheat germ
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups low-fat buttermilk
  • 1 large egg lightly beaten

Instructions

  1. Preheat the oven to 325°.

  2. Coat a 9 x 5–inch loaf pan with cooking spray. Line the pan with parchment paper, then coat it with cooking spray.

  3. Weigh the flours into dry measuring cups, and level them off with a knife. Combine the flours plus the next 6 ingredients (through salt). Combine buttermilk and egg and add it to the flour mixture. Stir that stuff until just combined.

  4. Spoon the mixture into the pan you prepped. Bake it at 325° for an hour and 5 minutes or until you can stick a wooden pick in and pull it out clean. Invert the bread onto a wire rack and let it cool completely. Remove the parchment and slice the bread into 12 slices.
