Total Time 1 hour 20 minutes
Servings 12 servings
Ingredients
- cooking spray
- 11.25 oz whole-wheat four
- 2.25 oz flour all-purpose
- 1/2 cup steel-cut oat such as McCann's
- 2 tbsp brown sugar
- 1 tbsp wheat germ
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups low-fat buttermilk
- 1 large egg lightly beaten
Instructions
-
Preheat the oven to 325°.
-
Coat a 9 x 5–inch loaf pan with cooking spray. Line the pan with parchment paper, then coat it with cooking spray.
-
Weigh the flours into dry measuring cups, and level them off with a knife. Combine the flours plus the next 6 ingredients (through salt). Combine buttermilk and egg and add it to the flour mixture. Stir that stuff until just combined.
-
Spoon the mixture into the pan you prepped. Bake it at 325° for an hour and 5 minutes or until you can stick a wooden pick in and pull it out clean. Invert the bread onto a wire rack and let it cool completely. Remove the parchment and slice the bread into 12 slices.
