Mexican Coleslaw
This tangy slaw works as a terrific topping or a super side.
Prep Time 20 minutes
Ingredients
- 1 cabbage julienned
- 1 carrot peeled and grated
- 1/2 cup cilantro chopped
- 1/4 cup rice vinegar
- 1/4 cup olive oil
- 1 tspn salt
Instructions

In a strainer, combine the cabbage and carrot. Rinse and drain for 5 minutes.

In a mixing bowl, combine the cilantro, rice vinegar, olive oil, and salt. Mix well.

Add the cabbage and carrot to the vinegar mixture and mix well.

Use the slaw to top tacos or as a side dish to your favorite savory dish.
