This no bake cheesecake is a simple dessert that feels rich and refreshing. The creamy filling sets gently in the refrigerator while the buttery crust holds everything together. No Bake Cheesecake with Berry Topping

Ingredients

For the crust

  • 2 cups crushed digestive biscuits or graham crackers
  • 1 half cup melted butter

For the cheesecake filling

  • 400 g cream cheese softened
  • 1 cup heavy cream
  • 1 half cup powdered sugar
  • 1 teaspoon vanilla extract

For the berry topping

  • 1 cup mixed berries such as strawberries blueberries, or raspberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Instructions

  1. In a bowl, mix the crushed biscuits with melted butter until the mixture resembles wet crumbs.
  2. Press the mixture firmly into the bottom of a springform pan to form the crust. Place it in the refrigerator while preparing the filling.
  3. In a large bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  4. In another bowl, whip the heavy cream until soft peaks form.
  5. Fold the whipped cream gently into the cream cheese mixture until fully combined.
  6. Spread the filling evenly over the chilled crust and smooth the top.
  7. Refrigerate for at least 4 hours until the cheesecake sets.
  8. For the topping, mix the berries with sugar and lemon juice and spoon over the cheesecake before serving.
