The classic pier-side comfort food.
- 2 eggs beaten
- 1/2 cup white sugar
- 1 large onion diced
- 1 cup self-rising flour
- 1 cup self-rising cornmeal
- 1 quart oil for frying
In a medium bowl, mix the eggs, sugar, and onion, then blend in the flour and cornmeal.
It's fry time! Heat 2 inches of the oil to 365 degrees F. Using a teaspoon, drop the batter in rounded balls into the oil. Let 'em fry until they're golden brown. Keep the batches small to keep the oil's temperature consistent. When you use the batter up, let your puppies drain for a few minutes on some paper towels. Serve 'em up hot!
