Easy and Healthy Fried Rice

Low-sodium fried rice option with plenty of vegetables.

Ingredients

  • 2 tbsp sesame oil
  • 3 cloves garlic minced
  • 2 chicken breasts diced
  • 1 tspn salt
  • 1 tspn pepper
  • 1 cup carrot chopped
  • 1 cup broccoli
  • 2 cups cooked brown rice
  • 1/2 cup peas
  • 3 tbsp low-sodium soy sauce

Instructions

  1. Heat the sesame oil in a skillet over medium-high heat and add the chicken breasts. Season with the salt and pepper.

  2. When the chicken is browned, add the carrot and broccoli and continue stir-frying.

  3. Add in the rice, peas, and the soy sauce and stir. Continue cooking until rice and peas are heated through.
