Unique and Delicious Boiled Peanut Hummus

Boiled Peanut Hummus

Hummus is usually made of chickpeas. But hey, if you can make a paste out of it, you can make hummus out of it!

Ingredients

  • 1 cup shelled boiled peanuts
  • 2 tbsp tahini
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh garlic minced
  • 1/4 tsp ground cumin
  • 2 tbsp olive oil
  • pinch of ground red pepper
  • olive oil, shelled boiled peanuts for garnish
  • pita chips for serving

Instructions

  1. Process the first 7 ingredient ingredients in a food processor until they're chopped coarsely. 

  2. While the processor is still running, pour olive oil through the food chute in a slow, steady stream. Keep processing until the mixture turns smooth. 

  3. Stir in up to 5 Tbsp. water, 1 Tbsp. at a time, to reach your ideal spreading consistency. If you like, garnish the hummus with extra oil and peanuts. Serve with pita rounds or pita chips.
