Use Up Your Veggie Scraps with Quick Pickles

Quick Pickles

Waste not want not- use up your vegetable scraps and peels by transforming them into a wonderful quick pickle.

  • 1 medium red cabbage thinly sliced
  • 1 large carrot shredded into long strips
  • 3 radishes cut into thin matchsticks
  • 1/2 cup rice vinegar
  • 2 tablespoons salt
  • 1 tablespoon sugar


  1. In a big bowl, toss cabbage with sugar and salt. Massage for a few minutes then let sit for 10 minutes.

  2. Place the cabbage in a clean dish towel and squeeze out the excess liquid. Return it to the bowl.

  3. Now, add carrots, radishes, and rice vinegar. Toss to combine and let sit for another 5 minutes.
  4. Serve and enjoy! 😀
