Waste not want not- use up your vegetable scraps and peels by transforming them into a wonderful quick pickle.
- 1 medium red cabbage thinly sliced
- 1 large carrot shredded into long strips
- 3 radishes cut into thin matchsticks
- 1/2 cup rice vinegar
- 2 tablespoons salt
- 1 tablespoon sugar
In a big bowl, toss cabbage with sugar and salt. Massage for a few minutes then let sit for 10 minutes.
Place the cabbage in a clean dish towel and squeeze out the excess liquid. Return it to the bowl.
Now, add carrots, radishes, and rice vinegar. Toss to combine and let sit for another 5 minutes.
